This Chinese New Year Rainbow Fortune Cookies snack recipe is simple and easy for preschool and kindergarten children to follow, and makes for a super fun and yummy treat! Just perfect for a Chinese New Year or Holiday-theme unit!

Cooking supplies you will need:
- 3 egg whites
- 3/4 cup of sugar
- 3/4 cup all-purpose flour
- 1/8 tsp salt
- 1/2 tsp of vanilla extract
- 2 TBSP water
- Food coloring
- Cookie sheets
- Gloves
- Muffin tins
- 30 strips of paper with fortunes written on them
Cooking directions:
Preheat the oven to 350 degrees.
Have the children generously grease 2 cookie sheets.
In a bowl, have the children beat the egg whites and vanilla, until foamy.
In another bowl, have the children mix together the flour, salt and sugar.
Next, have the children slowly pour the flour mixture into the egg white mixture, and blend well.
After that, have the children separate the Fortune Cookie mixture into 4 bowls.
In each bowl, have the children add a few drops of different color food coloring to the Fortune Cookie batter. For ours, we used orange (red and yellow food coloring), green (blue and yellow food coloring), yellow and red food coloring.
On a greased cookie sheet, using a teaspoon, have the children spread batter per Fortune Cookie in a (3-4-inch) circle. Each cookies should be about 4 inches apart. Prepare 2 to 3 cookies per sheet.
Bake the Fortune Cookies for 5 minutes or until the cookies have a 1/2 wide golden edge around the ends of the Fortune Cookies.
Quickly, place a strip of paper in the center of each cookie. Be careful – it’s hot!
Using a small metal spatula or butter knife, fold the cookie in a half-moon and then fold down the straight side of the cookie on the edge of a glass.
Let the fortune cookies cool in a muffin tin to hold their shape.
And, voila, the children have now made Rainbow Fortune Cookies for Chinese New Year! What an easy-to-make and delicious Chinese New Year recipe craft activity for preschool and kindergarten children. Just perfect for a Chinese New Year or Holiday-theme unit!
